When food gets personal: How science is personalizing what we eat

Why do people react differently to the same meal? In this talk, I will explain how understanding our inner biology and our different unique responses to food can help us have a more personal approach to healthy eating.

Diet is one of the most powerful ways we can influence our health. But did you know that the same meal can affect people in different ways? Now, imagine if your ideal diet wasn’t something to guess, but something your body could tell us.

That’s exactly the aim of 'precision nutrition' and the heart of the NUTRIOME project. In this talk, I will take you behind the scenes of a human trial to show how studying real people in real life can reveal what makes our responses to food so different, and how this teaches us to build personalized diets. 

With this knowledge - from the bacteria living in our gut to our metabolism and everyday habits - precision nutrition can help shape diets that truly fit individuals, instead of relying on ‘one size fits all’-advice.
